蝦猴料理
Marinated Shako (Mantis Shrimp)  

鹿港人常會說:一隻蝦猴配三碗粥,不但只是因為蝦猴口味很鹹,而他也是過去鹿港的民生主要餐桌上的重要食材。
蝦猴造型特殊,像是蝦子,又有點像寄居蟹,不需要像蝦子需要剝殼,小小一隻剛好可以一口吃,內行人會特別選擇帶蛋的母蝦猴,多了一種顆粒口感,可別忘了來體驗一下鹿港的海口人的海口零食。

At Lukang, there is a saying goes, “finish three bowls of congee with one marinated shako”. This is not only because the marinated shako tastes very salty, but also an important main dish for Lukang’s people at the past.

Shako(mantis shrimp) has a very special appearance. It looks like both shrimp and hermit crabs. It is small in size that enable to finish it with only one bite without peeling away the shell like you are eating shrimp. The insiders will choose to eat marinated shako with eggs which tastes a bit more granule than the marinated mantis shrimp with no eggs. 

Therefore, do not forget to stop at Lukang to try out this seaport’s snack like local people.

米糕 
Migao

米糕是以糯米製作成的飯類,但由於口味及地區的差異,米糕也有相當多的變化。
       
第一種是筒仔米糕,將米糕放入竹筒中,將肉、配料與醬汁一起蒸炊後就可上桌,第二種是鴨肉米糕,這類的米糕是以油飯的型態來製作,糯米飯再搭配鴨肉,米糕的味道會是非常濃郁的鴨肉味,有些也會加上米酒,增加風味,第三種則是米糕飯,糯米經過簡單炊煮後直接淋上滷肉肉汁與肉塊,直接拌著滷肉一起吃,比一般的滷肉飯更有嚼勁。

Migao is a cuisine made by glutinous rice. There are many types of Migao at different regions and taste demand at the place.

Firstly, we have Tongzai Migao which steam glutinous rice with meat, toppings and sauce in bamboo. Secondly, there is Migao with duck meat. The Migao very rich in taste of duck meat when the glutinous rice cooks together with duck meat using the same way as cooking oil rice. Sometimes rice wine will be added to enhance the taste of Migao. Last but not least, Migao Rice is the third type of Migao which steam glutinous rice top with gravy and meat. It is chewier than normal gravy meat rice.

麵線糊 
Paste Misua

海味為底,濃稠勾芡湯頭,再加上陽光于海風曝曬的手工麵線,一碗古早味的麵線糊,是小時候最美好的回憶。
在鹿港這樣的麵線糊依然還存在著,在大街小巷總可以看見不同的小攤販,都掛著麵線糊的招牌,不管早晚,一晚麵線糊呼嚕下肚,滿足了在地人空虛的胃袋以及小時候的美好記憶。
       
It is a most wonderful memory to have a bowl of paste misua with seafood and thicken soup. To enjoy the handmade misua that exposed under sunlight and sea breeze.
       
There are still paste misua as the above mention available for sale at Lukang. You can see various stalls at the streets and lanes at Lukang selling paste misua. Each of them has their very own feature but the most important element of paste misua.

肉包
Meat Bun

肉包好吃的重點有三,彈性的麵皮、香甜的肉塊、美味的湯汁,在鹿港的肉包,幾乎可以說是滿分了,這裡有傳統糕餅手藝製作的麵皮,彰化為豬肉產地的直送溫體豬肉,細心熬煮的鮮味湯汁,絕對是美味的極品。

There are three main points to make a delicious meat bun, elastic dough, tasty meat as fillings and delicious soup. Meat bun in Lukang is almost perfect in all of these aspects. The meat bun is absolutely best in taste with handmade dough using traditional pastry making technique, pork without refrigeration which sent directly from pork production place in Changhua,and tasty soup boiled attentively.

芋丸 
Taro Ball

用芋頭做成籤,包上了豬後腿肉,清蒸爽口不油膩,油炸酥脆口感,或者做成湯,滿滿芋頭香。
早期種植芋頭過剩時,將多餘的芋頭做不同的利用,有些拿來配飯,有些拿來做湯,而最有創意的就是芋丸,也因為這樣這種古早味的做法就一直留到了現在,成為了鹿港地區有名的小吃之一。

The taro is making into a long shape and wrap with pork’s hindquarters meat. Fried it to taste good and crispy but not oily. It fried or filled with taro fragrant when served as soup.

In olden days, when the taro yields more than demand. People use taro to make variety dishes such as side dish for rice, soup but taro ball is the most creative one within all invention. It becomes one of the famous snacks at Lukang because of the ancient way of making this taro ball.

鴨肉羹
Duck Meat Thick Soup

彰化海邊的養殖業發達,鴨肉也成了小吃中的重要角色,原有的肉羹做法加上了鴨肉口味,就成了另一味鹿港特色。
鹿港的鴨肉羹可不含糊,先將鴨肉川燙去骨切條,再用鴨骨熬製成鮮味十足的高湯,再搭配鴨肉、冬菜、筍絲、薑絲、香菇跟木耳一起烹煮,最後淋上烏醋,一碗沒有腥味、澀味,整碗豐富配料的鴨肉羹,是鹿港遊子魂牽夢縈的美味。

The cultivation business is well developed at Changhua seaside. Therefore, duck meat plays an important role in variety of snacks. Adding duck meat in the authentic meat thick soup had become another special delicacy at Lukang.

It is a very attentive process to cook a duck meat thick soup at Lukang. Firstly, remove the bone of duck and shredded it before boil it in water. Next, the bones are used to boil a fresh broth. Then, duck meat, vegetables, shredded bamboo shoots, shredded ginger, mushroom and fungus are added to cook. Lastly, serve with some dark vinegar. Here is the duck meat thick soup rich with ingredients without astringency. This is the best taste which misses a lot by Lukang’s people who leave home.

水蒸蛋糕 
Steam Cake

以古法製作的鹹蛋糕為基礎,用大型蒸籠以炊蒸的方式製作,以柔軟、蓬鬆、含水、綿密為特點,口感豐富甜而不膩,是在地人推薦的甜點之一。
最簡單的水蒸蛋糕幾乎許多糕餅店都有製作,但每一家店都還有屬於自己的特色,如黑糖、抹茶、芋頭、南瓜以及最道地的古早味鹹蛋糕。

With the ancient way of baking salty cake as basic, steam using the large steamer. Steam cake is soft, fluffy, watery and dense as special of the cake, rich in taste, sweet but not tired. Steam cake is one of the snack recommend by local folk at Lukang.

You can find steam cake in almost every bakery store but each of the them have its special characteristic, such as flavour in brown sugar, matcha, taro, pumpkin and authentic original flavour of salty cake.

魷魚肉羹
Squid Meat Thick Soup

在鹿港地區的魷魚肉羹,並不同於台灣其他地方,分別有肉羹以及魷魚羹,而是因為彰化特殊的山海交會,就算是羹類的也要做的同時擁有山珍與海味。
鹿港的魷魚肉羹除了基本的一定要有的魷魚、肉塊以及筍絲之外,還會多上一塊肉炸,這肉炸是由五花碎肉所組成,酥酥脆脆。

Because of the special terrain of Changhua where were made up by sea and mountain. The thick soup sells here has to be special by serving in both food ingredients from land and sea.

Other than the basic elements for squid thick soup, such as squid, meat and shredded bamboo shoots. They add crispy meat balls made by minced pork that distinguished Lukang’s squid meat thick soup from others.

豆花
Douhua (Soybean Pudding)
一個老城鎮里總有一味你無法忘記的豆花,鹿港當然也不例外。
豆花這樣百年不敗款的甜點可說是台灣人不可缺少的飯後小吃,在鹿港豆花一樣沒有缺席,豆花本身有足夠的黃豆香,挖出碗中還有保持形狀但卻入口即化,豆香會在口中發散而久久不去,配合用傳統紅糖熬製的湯底,自然的清甜但不會膩,可以加上紅豆、粉圓,色彩與口感都有了不同層次。夏天有冰,冬天可以做熱的,豆花是路邊甜美的道地台灣味。

There will be always an unforgettable douhua in an old town, Lukang as well.

Douhua is never fail to become the indispensable dessert for Taiwanese as well as Lukang. Douhua has enough fragrant of yellow bean. It is able to melt immediately in your mouth but the fragrant of the bean will stay. Also, the shape of douhua remains the same when it is served in a bowl. It tastes sweet but not tired with the soup cooked in traditional brown sugar. Red-bean and Fenyuan can be the toppings for douhua to enhance the colour and taste.

蚵仔料理
Oyster Cuisine

來自鄰近王功及芳苑海邊的蚵仔,卻在鹿港發揚光大,就是因為鹿港有豐富的辦桌文化,人口又較為密集,於是以蚵仔為主的料理變化相當精彩。
在鹿港變化無窮,種類變化包含有生蚵、蚵仔煎、炸蚵仔酥、蚵嗲、清蚵仔湯、蚵仔仁湯、蚵仔麵線、幾乎可以來個全蚵大餐了,而每一種做法還會因為老師傅的個人喜好有不同變化,彰化又因養殖方式的關係,比起其他地方更有嚼勁,也讓這樣的蚵仔飲食文化,成為彰化地區的美味指標。

The oyster comes from the neighbouring Wanggong and Fangyuan seaside. It had many stories can be told about the evolution of oyster cuisine at Lukang.

The variation of oyster cuisine included raw oyster, oyster soup, oyster misua and so on. It is many enough to serve an oyster feast. Every cooking method has its own differentiation vary by the master chef’s preferences.

天后宮(舊祖宮)
Lukang Mazu Temple(Jiouzu Kung)

天后宮當地人又稱為舊祖宮,原因是此為民間廟宇,後來官方又蓋了一座天后宮在附近作為官方廟宇,而為分辨兩者不同,便有新舊祖之稱。
天后宮並不大,但廟內之石雕、木雕、彩繪精彩萬分,由於信眾眾多,在廟內的藝術作品也被譽為全台灣廟宇最精緻作品之一。
也因為這樣,鹿港天后宮也被國際旅遊美食權威米其林公司評鑒為二星級的旅遊景點。

Lukang Mazu Temple also named as Jiouzu Kung by local folk. This is to differentiate the two Mazu Temples, the new one (Shingzu Kung) was built by government as official temple nearby Jiouzu Kung.

Jiouzu Kung has intricate stone carving, wood carving and vivid painting in the building, although it is not large in size. The art pieces in the temple is regarded as one of the most delicate temple artwork in Taiwan.
Lukang Mazu Temple(Jiouzu Kung) also evaluated by Le Guide Michelin which is international tourism and food authority as a two stars tourist spot.



龍山寺 
Longshan Temple

如果說龍山寺是鹿港人的驕傲,可一點都不為過。
        除了超過兩百年以上的歷史之外,擁有超過一千六百余坪的寺院空間,及建築格局也是全台首屈一指,而戲台上八卦藻井可是全台最大,展現出高超的工藝水準。
        龍山寺還被國際旅遊美食權威  米其林公司評鑒為三星級的必游景點。

There are undoubtedly that Lukang residents take the most pride in Longshan Temple.

It has a history of over 200 years with a size of more than 5289 square meters monastery area. This historic monument is one of the well-preserved temples in Taiwan. The most outstanding wood structure is Bagua caisson ceiling, above the front theater stage.  The amazing artifact shows the exceptional skills.
Longshan Temple in Lukang was awarded three stars in Le Guide Michelin.


鹿港民俗文物館
 Lukang Folk Arts Museum

當年,這是一座全鹿港最高的洋樓,是當時辜氏家族所有,也是當時鹿港人仰望的一間大厝。
佔地有一千四百餘坪,包含有和洋混合式三層樓建築,以及傳統閩式二層樓街屋建築,建築本身就在訴說著鹿港的發展史,建築內部目前由辜氏家捐出空間,并成立財團法人管理,整理辜家以及鹿港地區相關的收藏品,從民生、信仰、家具、器皿統統包含,這裡不只訴說一個家族的發展史,更是鹿港發展史的縮影。

This is the tallest western-style building in Lukang belonged to Koo’s family which look up by Lukang’s folk once upon the time.

Koo’s mansion has more than 4628 square meters, included a three-story building in Japanese Western mixed style and two-story townhouse building in traditional Taiwanese style. The building itself is telling about the history of evolution in Lukang. Koo’s family had donated part of the building to display the collection from Lukang and the family in few aspects, such as people’s livelihood, religion, furniture, utensils. It is managing by the foundation established for administration purpose. This is not only about a development of a clan, but also shows the history of evolution in Lukang.


玻璃媽祖廟台灣護聖宮 
Lukang Glass Temple

        以台灣重要信仰的媽祖為供奉神明,用七萬片的玻璃為衣,耐震八級以及十七級強風,神龕是一千四百片玻璃反覆堆疊而成的玉山影像,這在製作之前光想像就幾乎是不可能的玻璃廟,現在卻實實在在的出現在眼前。
        從早到晚,不同的光影效果透過玻璃,讓廟宇呈現不同的樣貌,早上的白、傍晚的紅、晚上的黃以及燈光展現出的不同美感。
這裡是廟宇?或許你會說這裡是夢幻中的水晶宮。

This unbelievable glass temple build up by seventy thousand pieces of glass which able to stand of 8 magnitude earthquake and super typhoon. Its shrine in Yushan image which made up by one 1400 pieces of glass had completely built in front of us today. This temple built to worship Mazu, the important religion of Taiwan.

The temple presents itself with different appearance because of various lighting effects through the glass every day and night. It is white in the morning, red in the evening and the night lighting is splashed and colourful. 

手工雞毛撣子 
Handmade Feather Duster

        雞毛經過整理、分類、清洗以及曝曬後,由製作者手腳並用的將棉線用特製的白膠整齊而順暢的黏在竹竿上,就成了從小最害怕的雞毛撣。
        每到了這間老房子,總會被大量的雞毛撣子給嚇了一跳,這並不是害怕,而是有這樣一個人用盡一生在製作著同一樣物品而這個物品卻是生活中細微而不可或缺的事情。
        現在成為了全台灣僅剩的手工雞毛撣子,除了販售外,也示範教學以及傳承手藝,讓這項工藝一直持續下去。

The producer glued the cotton thread neatly and smoothly on the bamboo sticks using both hand and leg with special made white gum after sort out, rearrange, clean up and expose the feather to the sun. A handmade feather duster which is most people childhood fear had done after all of these procedures.
The large quantity of feather duster shocked me every time. I am not afraid, but very moved by the one who spent a lifetime on making a same item. It is something small but indispensable in our life.
Now, it is the only handmade feather duster left in whole Taiwan. Other than offer for sale, there are handmade feather duster tutorial. Hope this handmade craft will never pass off.


手工麵線
 Handmade Misua

在紅磚老屋的三合院裡,一整片由細緻麵線拉出的波浪,像極了一整面滿滿的白色五線譜,太陽照射下的陰影互相應對出像是音符,呈現出一幅精彩的視覺樂章。
百年傳承的手工麵線,在鹿港的海邊村子裡,接受充足的陽光以及海風的吹拂,得天獨厚的氣候,配合上百年古厝的古樸風景,這由人、住所、文化與飲食作所揉合的畫面,在這裡完整保留下來,提供大家不斷的造訪。

The wave made up by the big area of fine and smooth Misua in the red brick old house looks like a big piece of white music sheet filled with music notes on it cause by the shadow under the sun. How wonderful!

The handmade Misua which inherited for hundred years.It exposed to sun and sea breeze at seaside Lukang’s village. The scene made up by people, residence, culture and diet with suitable climate and scenery of hundred years’ ancient historic home is preserved intact here for everyone to visit. 


手工制鼓  
Handmade Drum

三代傳的超過六十年,純手工牛皮製鼓,一年最多只有兩百只,幾乎被各大廟宇以及樂團給指定了,甚至還有來至中國以及國外的樂團特地來到這裡定做手工鼓。
在溝內村子裡,偶爾聽見試鼓聲,咚咚咚的在村子裡響著,但這一聲聲的鼓聲是需要經過拔毛、曬皮、繃皮、採皮才會到最後的調音,每一個階段都是製鼓師用心、用力一點點的磨出來。
也因為辛苦的過程,目前台灣也僅剩一家手工牛皮製鼓,大多樂團所使用的牛皮鼓都來自中國,但不管是效果或是耐用度,這老師傅的作品還是樂團的首選。

The technique of making handmade drum had inheritance more than sixty years and three generations. Here is the only one handmade drum business left in Taiwan. Only 200 drums available every year and almost all appointed. Many foreign bands come for customize handmade drum.

Sometimes, you can hear the sound of drum testing from the village. The cowhide has to undergo the process of epilation, expose under the sun, stretching and tuning to produce the drum and the rhythm you heard. Every stage of the process filled with attentive and strength from the master.

Here is the only one handmade drum business left in Taiwan because of the difficulties in the process of drum making. 



鹿港老街 
Lukang Old Street

鹿港老街是指埔頭街、瑤林街、大有街,而埔頭街、瑤林街這一段是過去鹿港的主要市街,前後有長形的閩式街屋,往前便是舊港口,往後則是過去的不見天街。
這裡目前為古跡保存區,路上的街屋都保留著過去的門面樣式。有部分已改為商店,有部分則還是屋主在居住著。
走在老街上常有掉入時光隧道的感覺,仿佛回到百年前的鹿港,看見過去的繁華,也因為這樣這裡被國際旅遊美食權威米其林公司評鑒為二星級的旅遊景點。

Lukang Old Street is combined by Putou, Yaolin and Dayou Street which Putou and Yaolin Streets were the main commercial district at the past. There are long townhouses in Taiwanese style behind the street, old seaport at the front. 

Lukang Old Street is now a heritage conservation district, so the townhouses are still retain their Qing-Dynasty character. Part of it had used as a shop but some of it still live by the house owner.When walking on the old street, it feel like dropping into a time tunnel which brings you back to the Lukang at the past hundred years to feel the bustling port. Therefore, the Le Guide Michelin which is international tourism and food authority had evaluated Lukang Old Street as a two stars tourist spot to visit.

桂花巷藝術村 
Lukang Guihua(Osmanthus) Alley Artists’ Village

桂花巷並沒有桂花,但卻有一整排的日式建築,由原本的日式宿舍所改建的桂花巷藝術村臨近於鹿港老街約五分鐘的路程,卻完全屬於不同時期的鹿港時空氛圍,讓你從清朝馬上飛到日本。
這裡是由八間日式宿舍經過修復而成的聚落,每一年由不同的文化與藝術團體進駐,在這裡透過各種不同的文化呈現方式,讓鹿港的居民以及來訪的民眾參與各種不同的活動。
初期大部分都是藝術家,而近期更有許多文化團體的進駐,帶動更多動態性的活動。,比如音樂會、野餐以及連結鹿港各地的文化活動。

There is no osmanthus in Guihua(Osmanthus) Lane but a row of Japanese style building. This Guihua Alley Artists’ Village which reconstructed from Japanese style dormitory is just five minutes walk from Lukang Old Street.It is able to bring you to Japan from Qing-Dynasty with the totally different atmosphere differ by two time frame of Lukang for these two places.

There are eight reconstructed Japanese style dormitory with different cultural and artist group stationed.It allow Lukang’s residence and people who visit here to join different kind of activities through variety ways.

在彰濱這個地方,同時擁有緞帶王織帶文化園區,台灣玻璃館,彰濱秀傳健康園區,白蘭氏健康博物館四個非常重要的產業與醫療博物館,也是台灣少數在同一個地區擁有各種不面相與體驗方式博物館。
這裡包含有知識的傳遞、手作體驗、產業生態活動、健康醫學教學等等,可說是從內到外,從靜態到動態,全部一次在這裡呈現,大人小孩寓教於樂的最佳去處。

There are four important industries and medical museums at Chang Bing which are Ribbon King Museum, Taiwan Glass Gallery, Chang Bing Show Chwan Memorial Hospital and BRAND’s Heath Museum. It is rare in Taiwan to see a few museums with different characters and they are located in the same neighborhood.

Here is a good place for edutainment both adult and kids. You can learn about some professional knowledge, try out some handmade works, join the ecology activities, go for lessons about health science and so on.
